Just a Minute....

ok, so i've been in my own little non-blogging world, but i have been cooking! and as soon as i relearn how to post a link i'll put up all the new tasties! you'll have to wait a day or so, until the kids go to sleep, and i finish my "vacation" laundry, but i promise you'll love all the new stuff when i get going again! just you wait....

Angie said...: Aah the blogging breaks, how I go on them often. It's nice to take vacation from it...get time to get new ideas lined up, and for you to get some real world practice with new foods!

Cause now that I'm pregnant...I'm going to eat good food...when I like food that is. If I ever like food of course...maybe it would be simpler if I didn't like food.

Cheesecake Factory Luau Salad

1 lb mesculin, or mixture of spinach and arugula
1 lb shredded chicken
2 lbs red and yellow bell peppers, sliced into thin strips
8 oun. blanched fresh green beans, cut into 3" pieces
8 oun. cucumber slices
4 oun. red onion, chopped
8 oun. fresh mango, chopped
4 ounces julienned carrots
1 ounce green onion, diagonally sliced
1 t. salt 1/4 t. pepper
toss altogether
DRESSING: 1 c. balsamic vinaigrette (i like t. joe's fat free) 1/4 c. rice vinegar, 1/4 c. sugar, 1 t. sesame oil. whisk together and toss with the veg/chix mixture.
FINISHINGS: 8 (6-inch) egg roll wrappers fried crisp, 4 oun. sweet and sour sauce, 4 oun. macadamia nuts, toasted and chopped, 1 T sesame seeds. brush a little sweet and sour sauce on the fried wrappers. serve by layering salad and e.r. wrapper, more salad and another e.r. and finally more salad. add the nits and seeds. serves 4. i obviously don't eat the nuts but hear the are delicious. also a great salad without the chicken, and tasty with the addition of avocado.

Liz's Dough-goodness

1. 1/2 c. really warm water 2. 1 pkg quick-rise yeast 3. 2 t. sugar
mix those together, set aside til all bubbly. 4. 1 c. butter 5. 1 c. sugar/honey 6. 2 c. boiling water 7. 2 t. salt. combine 4-7 then add the yeast mixture. add: 2 c. cold water, 4 eggs (slightly beaten), 12 c. flour. this is a sticky dough. knead for 7+ minutes, let rise supposedly 20 min. but realistically twice that. punch down and put in pans of your choosing, or make into scones. bake @ 330-ish for about 30 min. less if making rolls. makes 4 loaves and lots of rolls.

Hansen's Beverage Thai-style Couscous

*1 can Hansen's mandarin lime soda *1/2 t cayenne *2 cloves garlic, crushed *10 ounces quick cooking couscous *1 T toasted sesame oil *1 T lime juice AND soy sauce * 2 green onions, chopped *1/2 c cilantro, chopped 1. combine soda, cayenne & garlic in pot. boil. remove from heat and stir in couscous. cover, let stand 10 min. 2. in small bowl combine oil-cilantro; set aside 3. uncover couscous, fluff with fork, stir in contents of small bowl. i can't find this soda out here, so i substituted a natural tangerine soda and added 2 extra tablespoons of lime juice. i also use whole grain couscous from t.joes. yummy.
